FROM UJI, JAPAN
THE MATCHA
Stone-ground silence in a bowl.
THE SOURCE
ONE FARM.
FOUR GENERATIONS.
Our matcha comes from a single family farm in Uji, Japan — the birthplace of matcha, where the craft has been refined for over eight centuries. The same family has tended these tea fields for four generations, shading the plants under traditional canopies each spring to concentrate the chlorophyll and amino acids that give great matcha its vivid color and umami depth.
We source directly from this farm. No trading companies, no brokers, no blending with lesser grades. The leaves are hand-picked at the peak of the first harvest, steamed within hours, and stone-ground on granite mills that produce only forty grams per hour. You cannot rush this process. That slowness is what makes it extraordinary.
By buying direct, we ensure the family earns a fair price for their work — and you get matcha that was ground days ago, not months. This is not commodity powder. This is the real thing.
SHADE-GROWN
Three weeks before harvest, the fields are covered with traditional reed screens. Denied direct sunlight, the plants produce more L-theanine and chlorophyll — the compounds that give ceremonial matcha its calm energy and electric green color.
STONE-GROUND
Each granite mill produces about forty grams of matcha per hour. The low speed prevents heat buildup that would destroy the delicate flavor compounds. There are no shortcuts — the mill turns, and the powder emerges, fine as silk.
FIRST HARVEST
We use only first-harvest leaves, picked in late April and early May. These youngest leaves have the highest concentration of nutrients and the smoothest, most nuanced flavor — no bitterness, no astringency.
THE MENU
How we serve it
01
MATCHA LATTE
Ceremonial-grade matcha whisked into a smooth paste, then married with steamed milk or your choice of plant-based alternative. Delicate foam on top. The warmth of ritual in every sip.
02
ICED MATCHA
The same ceremonial-grade matcha, whisked cold and poured over ice with milk. Clean, bright, and cooling. The green is so vivid it almost glows. Perfect for warm afternoons in the city.
03
CEREMONIAL BOWL
Pure matcha, prepared traditionally. Sifted into a handmade bowl, whisked with a bamboo chasen until a fine foam rises. Nothing added, nothing hidden. This is matcha as it was meant to be experienced.
THE CEREMONY
SLOW DOWN.
The Japanese tea ceremony isn't about the tea. It's about the pause. The sound of water heating. The scoop of bright green powder against a dark bowl. The rhythmic whisking — wrist, not arm — until the surface becomes a cloud of fine, jade-colored foam.
We offer intimate matcha ceremonies at Enoch's for anyone who wants to experience this practice. No expertise required — just a willingness to be present for a few quiet minutes in the middle of Manhattan.
